The Las Iguanas Spring menu lands on 10th April celebrating the authentic flavours of Latin America. Book your culinary getaway now with the new holiday brochure-style menu, taking you off to exotic destinations, from the beaches of Brazil to the streets of Mexico and the parrillas (steak houses) of Argentina.
The menu flies in a host of brand new additions, made lovingly from scratch by the team of skilled chefs and guaranteed to give a boldly spiced taste of Latin America. Fifteen new dishes take up residence alongside classics such as Xinxim and Moqueca, Fajitas, Burritos and award winning Burgers*. The cocktail menu follows suit with 25 new offerings and the introduction of biodegradable PLA straws from May, because plastic straws suck.
Tapas are first class and the brand new Pli’s Prawn Pastels are made using our friend Plicila’s secret recipe straight from Itaipu beach near Rio de Janeiro - pastries filled with succulent prawns in a mildly spiced coconut, mint, rosemary and cream cheese sauce. Mini Chile Dogs have made the trip from the seasonal Hot List to the main menu, while Salt Cod Croquettes served with aioli will leave you dreaming of sunnier climes. New mains have also had an upgrade and the showstoppers must surely be the Maracanã sourdough bread bowls, spilling over with either prawns in peanut, chilli and coconut or butternut squash, palm hearts, spinach and peppers in a cheesy tomato sauce. For something to really get the mercury rising try Dominican Goat Curry, a fiery goat and scotch bonnet chilli curry served with spring onion rice, fried plantain and pink pickled onions. Peruvian favourite, Ceviche also makes its menu debut and is made from scratch using sustainable white fish marinated in zingy tiger’s milk- a seafood lover’s dream.
If you’re in the mood for something a little lighter, try the delicious Green Quinoa Salad with avocado, lime, okra, coriander, sultanas and pink pickled onions on a bed of spinach, with a poppy and pumpkin dressing topped with pretty edible pansies– a vegan dish full of goodness and flavour. Las Iguanas pioneered separate veggie/vegan and gluten-free menus and the choice this spring is bigger than ever.
To end the journey through Latin America indulge in the Brazilian Brigaderio Ice Cream with three scoops of rich chocolate fudge ice cream topped with dulce de leche sauce and crispy chocolate sprinkles. Classics such as the Churros and Banana Empanadas shouldn’t be missed, so bring your friends and grab a spoon. As a parting gift to guests at the end of their meal Las Iguanas will be giving away collectable recipe cards to encourage diners to try making dishes from scratch at home.
With 25 new cocktails to try, expect to be spoilt for choice at the bar. The Passion Sour Bomb, a concoction of Malibu passion fruit, sour sherbet, orange and soda, is a flavour explosion sure to get you in the mood for a celebration. If you want to keep things simple try out the Rum Julep, a perfectly balanced mix of 7 year rum, coconut water, mint and sugar or perhaps the classic Peruvian Pisco Sour, made egg-free for a vegan twist. Supercharged options include the Large Hadron Colada a mega-pina colada served with obligatory umbrella, and get ready to see the sights with The Pearly Queen; a porn star martini for 6 to share, served up in a giant conch shell for added glam… For those feeling virtuous, the sky’s the limit with mocktails galore; the Guava Cooler or Banana Ginger Beer are sure to keep you refreshed as temperatures rise. The best news is that all cocktails and mocktails are 2 for 1 ALL DAY, EVERY DAY.
For a truly unique experience, Las Iguanas’ brand new cocktail trunks are made for celebrating in style. These bespoke trunks come to the table with all of the ingredients needed to make 14 Havana Club rum Mojitos or 20 Las Iguanas Magnifica cachaça Caipirinhas, so guests can try their hand at mixology. Cocktail Masterclass sessions also feature the trunks set up as mini bars and are the perfect activity for groups. Find out more at www.iguanas.co.uk/masterclass.
