What’s the recipe for a great launch party? How about high quality authentic Mexican food, combined with delicious cocktails, a dash of music, around 100 guests, vibrant decor and a buzzing atmosphere!
That was the scene at Intu Derby, on Thursday 30th June, for the official opening of MEXIco, the new restaurant that offers diners a menu developed by Johnny Hernandez. The executive chef, who is renowned for his Mexican cuisine, recently cooked for President Obama, and now he’s swapped the White House for Derby.
The launch party was attended by a mix of local businesses and members of the public who got to experience samples of Johnny’s amazing array of signature dishes, including salsa samplers, homemade guacamole and chips, pork tostadas and puffy tacos, as well as homemade guacamole and authentic stone ground corn chips.
Guests were also treated to some incredible drinks, including the very best classic and contemporary versions of the legendary Margarita. The bar team also served a small selection of Agua Frescas using fresh fruit and juices. Meaning ‘fresh waters’, Agua Frescas are the drinks equivalent of “street food”, cool and informal with a vibrant and colourful personality, providing an authentic taste of Mexico and an option equally delicious with or without alcohol
Freddie Lock, of MEXIco, said: “The whole evening was fantastic. The people, the food, the drinks, the atmosphere – they all added up to a great night.
“Now that we’re open, we’re really excited about the next few weeks, as this will be the time that diners will come and experience MEXIco for themselves. We’re confident that they are going to love the menu that Johnny has created and enjoy the real taste of the rich variety that Mexican cuisine has to offer.”
