Derby food lovers are set for a riot of flavour and excitement with the opening of MEXIco, which promises diners and drinkers a more authentic experience.
MEXIco’s menu has been developed by top US chef renowned for his Mexican cuisine, Johnny Hernandez, who recently cooked at the White House for President Obama’s Cinca de Mayo celebration.
Guests will be able to enjoy this true taste of Mexico when the restaurant opens its doors on Friday 1st July at intu Derby.
Johnny will bring a new flavour of Mexican cuisine through his inspired menu of authentic mouth-watering dishes and an incredible drinks list, perfect for matching or just enjoying on their own at the bar.
The MEXIco menu will include an amazing array of signature dishes. While guests are selecting their dishes they can try the homemade guacamole and authentic stone ground corn chips.
Guests should make sure they try the MEXIco Puffy Taco, a signature dish that will surprise, delight and excite with every bite. Puffy, crispy, hand-pressed tortillas are served with pulled chicken tinga, shredded lettuce, tomatoes and freshly made guacamole. There really is nothing like it in the UK right now. Other signature dishes include stone ground corn tortilla chips, freshly made guacamole, enchiladas and the chipotle queso burger. Delicious desserts include classic churros and the banana burrito with dulce de leche.
When it comes to drinks MEXIco is confident that it will own the Margarita, creating the very best classic and contemporary versions of this incredible cocktail. Also available is a range of tequilas and mezcals, including a selection of tequila flights, ideal for those getting to know Mexico’s favourite spirit or those just starting out their exploration.
The bar team will also make a small selection of top quality Agua Frescas using fresh fruit and juices. Meaning ‘fresh waters’ Agua Frescas are the drinks equivalent of “street food”, cool and informal with a vibrant and colourful personality, providing an authentic taste of Mexico and an option equally delicious with or without alcohol.

“Working with the legendary Johnny Hernandez, who is probably the finest Mexican cuisine chef in America, to create MEXIco has been amazing. His menu will give guests a real taste of the rich variety that Mexican cuisine has to offer, a change from the usual standard dishes, and we have a created a bar menu and cocktail list to match his creations.
“Right now we are working on getting everything in place to be ready for our opening at the end of June. To match our authentic Mexican menus we’re have been searching for unique art from local artists across Mexico, which will mean guests not only get the true taste of Mexico but the true experience as well.
